Palacios sits on the western Matagorda Bay, roughly 130 miles and a two-hour drive from inside the Loop. Of the big-four Texas metros, Houston is the closest to our farm — which means it is both our easiest delivery window and the most forgiving cold-chain hop. For Houston chefs, retailers, and program managers, the practical read is: fish harvested Wednesday morning can be in your back-of-house by Wednesday afternoon.
