A fish counter lives or dies on three things: what looks good in the case, what sells to a customer who asks, and a clean record when something goes wrong. We farm one species in Texas, grade by hand at harvest, and ship with a lot ID printed on every carton. The counter story is Texas-grown redfish from a named farm — a sentence your team can finish without a script.

01 · Display

Hand-graded for the case.

Consistent size and shape in the case is the first purchase signal. Food-size whole fish run 2–4 lb; fillets come hand-graded so a counter display reads as intentional, not picked-over.

02 · Signage

A Texas-grown story the counter team can tell.

Farm name. Palacios, Texas. Harvest date from the lot. Sciaenops ocellatus, the Texas State Saltwater Fish. Commercial wild redfish is illegal — so "farm-raised" isn't a qualifier, it's the category.

03 · FIFO & recall

Lot ID that keeps the back-room tidy.

Harvest date on the carton. Counter teams rotate on harvest date, not receive date. If a recall ever happens — yours or the industry's — the lot traces back to broodstock, raceway, and harvest date in one step.

04 · Category credibility

A Seafood Watch Best Choice category.

The Monterey Bay Aquarium's Seafood Watch program rates U.S. pond-farmed redfish as Best Choice. That rating is category-level, not per-farm — link to the source report and cite it as a category rating, not a farm-specific claim.

What a counter buyer asks first.

What's a typical first order?

A mixed case of whole fish and fillets, graded for consistent counter display. From there we scale to a weekly or twice-weekly standing cadence.

What can we put on the counter signage?

Farm name, Palacios, Texas, the species name (Sciaenops ocellatus, Texas State Saltwater Fish), and harvest date from the lot ID. "Texas-grown" labeling applies to fish we ship direct from our farm. For the Seafood Watch reference, cite it as a category rating (U.S. pond-farmed redfish) and link to the source. Confirm final wording with your counsel.

How does the lot ID support FIFO and recall?

Every shipping carton carries a lot ID with the harvest date on the lot card. Counter teams rotate on harvest date — not receive date. In the event of a recall, the lot traces back to broodstock, raceway, and harvest date in one step. A public per-lot URL (turtlecreek.fish/lot/[id]) is in development for v1.1.

Can we place standing orders tied to weekly sell-through?

Yes. Once the counter's sell-through pattern is clear, we shift to a standing weekly or twice-weekly cadence planned against our harvest calendar. Case counts and product mix adjust by week on a rolling basis.

Where do you deliver?

Texas by default. Out-of-state available case-by-case via cold-chain freight. Tell us your distribution-center or store-receiving zip and we'll quote.

  1. Banner or shop name. Single counter, multi-store chain, or specialty butcher.
  2. Store count and receiving setup. Direct-to-store or through a DC.
  3. Weekly poundage estimate, per counter. Even a rough range.
  4. Whole / filleted mix. And counter-display size preference if any.
